1 cup old fashioned oats
1 cup cereal (consider using a protein-rich Kashi blend cereal; original recipe called for puffed rice)
1/2 cup peanut butter
1/3 cup honey
1/2 tsp. vanilla extract
1/4 cup mini chocolate chips (or white chocolate chips, if you prefer)
Other options: mix in cranberries, sunflower seeds, flax, etc.
Mix everything together and let it sit in the fridge for about an hour and then roll mixture into balls. Refrigerate for up to two weeks.
