Food and Nutrition Management
Interns learn how to direct food service subsystems cost effectively within an integrated nutrition delivery system. Interns participate in all facets of food and nutrition management, including the areas of food production, food service, retail operations, human resource management, clinical nutrition management, special projects and staff relief. Approximately 20–25 percent of the supervised practice experiences are in food and nutrition management.
